I do not know that flower. Do you use the roots?
I don’t, personally, but I believe it was a coffee substitute back in Europe, mainly. Leaves are sometimes used in a salad.
In Louisiana it is used as a coffee enhancement. Community coffee, I think, cajuns. Good stuff. Not everybody likes it.
